Choux With Vanilla Pastry Cream
Ingredients :
(1) CHOUX :
*Use Beater Hook Attachment
125 g Fresh Milk
125 g Water
125 g Butter
6 g Salt
10 g Sugar
163 g Medium flour
230 g Eggs

(2) PASTRY CREAM :
250 g Fresh Milk
80 g Granulated sugar
18 g Corn starch
2 pc Egg yolks
20 g Butter
Drop of Vanilla paste

(1) HOW TO MAKE CHOUX PASTRY :
1. Preheat the oven at 180°C use fan, prepare the saucepan and combined butter, salt, sugar, fresh milk, and water together inside the saucepan. Heat the saucepan until boiling.
2. After boiling turn off the stove, add the flour into the mixture and stir well.
3. After the mixture become wad, turn on the stove again in low heat. Continue stir until well blend about 2 minutes.
4. Turn off the stove, remove the dough from the pan, put inside the mixing bowl.
5. At medium speed, beat them until the mixing bowl turn to cool about 5 minutes.
6. Add the egg gently and gradually into the mixtures until the dough become soft and thick.
7. Prepare baking tray and covered with silpat or baking paper, pipe the dough into baking tray, start from the centre and go around it, finish it in the middle and pull up.
8. Bake it about 15 minutes, after 15 minutes lower down the temperature to 160°C and continue bake it about 15 minutes.

(2) HOW TO MAKE PASTRY CREAM :
1. Combine milk, sugar, cornstarch and egg yolk, turn on the stove at medium heat and place the saucepan on it. Stir well with balloon whisk until all ingredients combined and the mixtures is thick.
2. Turn off the stove, add butter and vanilla paste and whisk until uniform. Put the pastry cream inside the piping bag.
